We're deep in the throes of winter, so we might as well celebrate the chilly conditions with some very appropriately themed winter bars. If you're keen to rug up with belly-warming boozy concoctions and delicious bites amongst faux snow and European-inspired chalets, then we have a few very-cool destinations worth checking out. Just remember your winter warmers!


Veuve Clicquot In The Snow at Customs House
Everyone’s favourite winter pop-up bar, Veuve Clicquot In The Snow, has once again returned to Customs House for the chilly season. Featuring its signature igloos, textural winter styling and plenty of Veuve Clicquot champagne, the pop-up’s breathtaking river vista and enticing menu are a sure-fire way to chill out and experience Euro chalet vibes. In addition to a range of Veuve Clicquot champagne available by the glass and bottle, the drinks menu features Australian and French wines, beers, and cocktails including the Berries & Bubbles with fresh raspberry, lemon juice, Belevedere Pure and Veuve Clicquot Brut. A menu of snacks is available to graze from, which includes the Customs House pop-up bar classic – the Moreton Bay bug brioche roll with lime and dill mayo! Freshly shucked Tasmanian pacific oysters, whole baked brie served with crostini, and mac and cheese croquettes with truffle aioli are also on the menu, among much more (including a range of Aussie, Italian and English cheeses) for some decadent winter indulgence. Winter Reloaded at WET Deck
Winter currently has Brisbane clutched firmly within its icy grasp, but just because it’s cold doesn’t mean we can’t party poolside. WET Deck, W Brisbane’s elevated pool bar is heating up the cooler months with Winter Reloaded, an apres-ski-inspired pop-up running until Wednesday August 31. The space has been given a weather-appropriate makeover, complete with cosy furnishings in winter colours, plus plenty of chunky knit blankets, cushions, rugs, and firepits. A menu of bone-warming dishes like prawn and chorizo paella, lamb shepherd’s pie, slow-cooked brisket cheeseburgers, baked Woombye brie with caramelised onions and pistachios, pickled figs and baguette crisps, and a lobster mac ‘n’ cheese. A clutch of winter-themed cocktails – inspired by famous ski destinations – are also available, including the marshmallow-topped Pumpkin Spice (Woodford Reserve rye whiskey, pumpkin, pineapple, five spice and egg whites) and the Miso Old Fashioned (Glenmorangie Tales of Winter whisky, sake, miso, shitake mushroom, soy milk, seaweed and narutomaki). A W-style ski gondola is available for hire, with groups of four able to book the cosy cubby for some VIP action, which includes gruyere cheese fondue to share and Veuve Clicquot brut with spoons of yuzu and orange caviar. Emporium Hotel x Mumm Champagne Ski Chalet
Frosty folk can hang up their coats and put aside their skis at the new Emporium Hotel x Mumm Champagne Ski Chalet inside the Piano Bar. Enjoy heart-warming limited-edition cocktails or get lost in a long list of rich Mumm Champagnes like the 1996 Mumm Cordon Rouge ‘Chef de Cave’ Magnum and the 2002 Mumm R.Lalou Cuvee Magnum. But that’s not all … reside by the fire with a range of winter warmers everybody knows and loves including cheese and chocolate fondues, soup of the day, colourful macarons or a childhood favourite – jaffles. Tinseltown
If you love Christmas and getting into the festive spirit then we have the bar for you. Say hello to Tinseltown, where it’s Christmas Day, every single damn day (even in July!). This pop-up bar, brought to you from the Explore Hidden team, is decked out in all the festive glory from trees to tinsel galore in a space located in South Bank. Festive bar hoppers can expect Christmas tunes, fun games, hidden mistletoe, decadent drinks and of course, Santa himself. Grab your tickets here.

The Rooftop Lodge at Cali Beach Club
This winter will see snow falling in Surfers Paradise at Cali Beach, as it transforms into The Rooftop Lodge – an après ski-inspired pop-up bringing a proper winter to the Gold Coast until the end of August. Every inch of the rooftop venue has been overhauled to create The Rooftop Lodge, featuring an alpine forest of more than 60 snow-topped trees, fire pits and more – there will even be faux snow falling throughout the venue! Saké Sisters restaurant will become the Après Ski Lodge, The Cali Shop is turning into the Chalet Bar and an impressive dome Igloo Bar (the size of a tennis court!) has been craned in, complete with a toboggan-slide entry. Cali Beach’s VIP cabanas have been converted into luxury alpine lodges, decked out with fire pits and cosy furnishings, and between the pine trees you’ll discover two functioning hot tubs, pop-up games (such as ice-hockey competitions) and snow-themed surprises. To keep you warm from the inside out, The Rooftop Lodge has created a special winter food and drink menu, featuring fondue, charcuterie boards and even marshmallows to roast over the fire pits. There will be plenty of cocktails and drink specials on offer too – including the classic shotski game, where you have to take shots of a ski in sync with your friends.
