The Christmas Day lunch BBQ includes:
- Charcuterie including a selection of breads, vegetable crudities, smoked pastrami, marinated chorizo, roasted chicken
- Seafood featuring smoked salmon, marinated mussels, squid salad, ocean orawns with cocktail sauces, freshly shucked Rock Oysters
- Salad sections of garden salad, slivered almond and green beans, sweet potato and chickpea, roasted cauliflower salad, Caesar salad
- Roasted, smoked, grilled and tossed 12 hour lemon pepper and garlic marinated lamb, roast turkey breast with sage onion stuffing and cranberry jus, beef brisket Four Points style, slow cooked maple glazed ham with charred pineapple chunks, grilled North Queensland Barramundi snow pea tendril, cream leek. Served with mustards, relishes, sauces and slaw
- Desserts Christmas pudding with traditional anglaise, fruit topped pavlova, dark chocolate mousse with honey comb, fresh sliced seasonal fruit, sweet little Christmas treats, Australian cheeses, quince paste, drive fruits and nuts, lavosh and crackers
