INGREDIENTS
3 cups of grated red or green apple
2 teaspoons baking powder
1/4 teaspoon of sea salt
3 organic free-range eggs
1/4 cup of coconut oil
1/2 teaspoon of cinnamon
1 teaspoon of maple syrup
1 cup of almond meal
1 cup of self-raising flour (gluten free if desired)
1/4 cup of coconut
TO MAKE
Line a loaf tin with baking paper at the base and sides or for a more rustic look, push a full sheet of baking paper into the loaf tin. Preheat the oven to 180°C.
Combine apple, baking powder, salt, eggs, oil, cinnamon and maple syrup into a bowl and mix until combined. You might even want to get your hands dirty here to make sure all the ingredients get around the grated apple.
Add the almond meal, flour and coconut and mix through gently. Careful not to over mix so just until it’s combined.
Spoon the mixture into your loaf tin.
Bake for one hour or until a skewer inserted comes out clean. Times may vary so check after 45 minutes.
Remove from the tin and allow to cool.
Drizzle with honey and eat!
