The barbecue snags have already been bought, the family pavlova recipe has been dusted off and the lamington rush is about to begin, but before you go all in on the staples this Australia Day weekend, could we tempt you with something outside the box? A bunch of local eateries are getting experimental with the Australia Day specials this year, taking us on a gastronomic journey that would be worthy of a Banjo Patterson poem.


Vegemite Burger at Burger Project
Yep, you’re reading that correctly. The substance that makes many non-Australians grimace is the key ingredient of Neil Perry’s latest special. Burger Project launched its very own Vegemite burger to celebrate the Australian Open and is offering it to any adventurous souls at all Burger Project locations. Vegemite is spread on a soft milk bun and topped with a beef patty, mayonnaise, lettuce, tomato and crunchy onions. As far as we’re concerned, this is the most true-blue burger we’re likely to see.

Sausage sizzle pizza at Salt Meats Cheese
An Australia Day staple is being given the pizza treatment at Salt Meats Cheese locations at the Gasworks and Surfers Paradise. That’s right – there’s no need to fire up the barbie that you haven’t cleaned since last Australia Day. All you need to do is dine in at either location over the weekend. The pizza comes with a sausage-filled crust and is topped with tomato, onion, mozzarella and more sausage. Just give it a squeeze of some tomato sauce and mustard and you’ve snagged yourself a sizzling good deal.

Vegemite and XXXX snags at Meat at Billy’s
Strewth – this combination might be Australia’s greatest invention. Famed butcher Meat at Billy’s is merging the condiment of the moment – Vegemite – with some frosty beer from XXXX to create a fair dinkum snag. Curious about how this sausage comes to be? Eggcettera long paddock lamb is combined with sweet potato and fresh rosemary, as well as a dash of XXXX Gold and a dollop of Vegemite to create this salivation-inducing sausage. These bangers won’t be around for long, so be sure to stock up.

Tim Tam-loaded doughnuts at Kenilworth Bakery
If you live outside of the Sunshine Coast then this item requires a bit of a road trip to obtain, but it’s worth it. Take a Tim Tam – one of the most beloved chocolate treats ever created – and place it inside a cinnamon doughnut and what do you have? A damn-near masterpiece, that’s what. Kenilworth Bakery – the home of coffee doughnuts and other delights – is creating a special doughnut stuffed with a Tim Tam for the Australia Day weekend only – meaning that you can only get your fix on January 26–28.

Vegemite Melt at Melt Brothers Grilled Cheese Co.
If you couldn’t tell, we can’t get enough Vegemite at this time of year. Melt Brothers is putting its own spin on the iconic lunchtime staple – the Vegemite and cheese sandwich – with its own Vegemite Melt. Two slices of white sourdough bread are lovingly lathered in Vegemite and piled high with cheddar and mozzarella cheese then grilled to perfection.

Meat Pie Sliders and LAMBington Burgers at Pig’N’Whistle
Food fusions don’t get much more Aussie than this. The crazy individuals at Pig’N’Whistle have gone all out for its new selection of specials – we’re talking morsels far removed from the bog standard. Here’s the scoop – you can get your hands on three kinds of spiffy sliders inspired by the greats. The Shrimp on the Barbie slider, the LAMBington slider and the Meat Pie slider will be available at all Pig’N’Whistle locations around Brisbane, so you’ve got plenty of opportunities to sample all three.

The Oz Day Schnitzel at The Bavarian and Bavarian Bier Café
Two of Brisbane’s best Germanic eateries are encouraging punters to ditch the snags for schnitties. How are they doing so? By plating up a schnitzel with some decidedly delicious accoutrements over the Australia Day long weekend. A one-kilogram schnitzel (fit to feed four) is topped with bacon, eggs and cheese and plonked on a plank for you to tackle. It’s serious business, but round up a group of pals if you are up to the challenge.

Chester Street Bakery never turns down an opportunity to bake a specialty cake and The ‘Straya is pretty special. Picture layers of chocolate and vanilla sponge, raspberry jam and white chocolate ganache, topped with chocolate and desiccated coconut flakes. Oh, it’s also got green and gold candy at its centre, which is another plus.
