Real mature – West End is getting its very own cheese factory

How long do you think it would take you to get through two thousand kilograms of mozzarella? Even the most seasoned cheese enthusiast would have to guess it would take some time to finish a supply that big … but it only takes the gang at Salt Meats Cheese one week. Across its Queensland and New South Wales stores, the Italian eatery goes through enough of the good stuff that it has decided to cut out the middle-man and make its own – and West End’s ever-evolving West Village precinct is the chosen home for Cheese Fattoria by Salt Meats Cheese.


Our southern neighbours might be a bit jealous, but the decision to open Cheese Fattoria in Queensland was a deliberate move to have access to the best ingredients for production. The location of the fattoria means it is in close proximity to the best jersey cows in the Toowoomba region, with fresh and high-quality milk obviously being the key to amazing cheese (it’s all about those salts and fats, guys). Cheese will be made using a machine imported from Italy, with a team of experts making the journey from Puglia to train up local staff in the art of cheese making over the next six months.

With such a great set-up, it’s no surprise that Cheese Fattoria will be churning out some amazing produce. Mozzarella logs may be in high demand but the factory will produce much more – expect to see the likes of nodini, treccia, truffle burrata, scamorza, pecorino, provolone and buffalo mozzarella. This exciting new development will be opening under the same roof as the SMC West Village Restaurant and Cooking School, so if you’ve ever been interested in making your own delicious dairy-based treats then your chance is fast approaching.
