The burgeoning baked-goods concept is set to add a range of salivation-inducing cakes that come in flavours including ube velvet, vanilla and lemon curd, and old-fashioned brown-sugar caramel. Ditch the box cake mix – these bad boys should be your go-to celebration treat from now on.


Ginger Mendoza knows how to delight our sweet senses. The artisan baker’s cookies are a huge hit in The Weekend Edition office and we know we’re not alone – they’re also a highly sought-after treat every week at the Brisbane City Markets, Milton Markets and Jan Powers Powerhouse Farmers Market. It’s near impossible to fault Ginger’s Kitchen’s cookies – they’re good to the last crumb – so where does one go when they’ve thoroughly conquered cookie creations? Cakes, of course! Ginger is expanding her repertoire to fluffy, frosting-covered delights, with a new range of deluxe occasion-worthy cakes designed to evoke cherished childhood memories.

Ginger’s Kitchen’s collection of eight enticing cakes look to make the most out of fresh local ingredients, with unadulterated flavours shining through from moist centre to tastebud-tantalising topping. The range includes a purple-hued ube velvet cake (an ode to Ginger’s Filipino roots) boasting ube cream-cheese frosting topped with ube crumbs, a chocolate cake coated in chocolate fudge with a light dusting of cocoa, vanilla bean cake with old-fashioned brown-sugar caramel frosting enhanced with a hit of sea salt, and a buttermilk cake boasting a blueberry filling and finished with vanilla buttercream.
