Hai-Hai Ramen brings Japanese comfort food to Paddington

Looking to bring a new element to Paddington’s dinner scene, a group of friends have stepped outside their comfort zones and opened Hai-Hai Ramen on Latrobe Terrace.

Situated in an unassuming spot across the road from Paddington Central is Brisbane’s newest ramen location, Hai-Hai. Kept under wraps until its soft opening in mid-March 2016, Hai-Hai immediately set tongues to talking with its concise but delicious menu of Japanese-inspired cuisine, including a unique take on the popular noodle soup dish. Owned and operated by a group of friends who were looking for an opportunity try something new in Brisbane food scene, the group settled on the idea of a ramen-based endeavour. The group decided that ramen deserved a higher profile within Brisbane, and chose to take it into their own hands to bring it to prominence. Hai-Hai Ramen aims to make ramen and Japanese cuisine accessible for Brisbane eaters, with a concise menu that manages to pack an impressive amount of variety.

Hai-Hai Ramen’s menu has been built from scratch. The team set about undergoing a process of rigorous testing of their custom recipes until they were happy with the end result, bringing their own spin to the cuisine while still paying respects to the classics. The finished menu includes three types of ramen – a pork tonkotsu variety with pork bone broth, charsiu pork belly, black garlic oil and hanjuku egg, a chicken verierty with shio koji chicken, chicken and dashi broth and tsukemono pickles and a final vegetarian ramen with kelp and shitaki broth, tofu and greens. Each ramen comes with either a shio (salt) or shoyu (soy) broth – salt offering a simpler and cleaner taste while soy is sweeter and richer. Those who are after something other than ramen are catered for, with steam buns boasting either charsiu pork of tofu katsu available alongside sweetcorn with miso butter and chicken karrage with koji marinade and yuzu kewpie. The coming months will see Hai-Hai Ramen bring in more Japanese craft beer as well as sake and shōchū, while the food offering will soon expand to cater for lunch crowds.
