Ice-cream is amazing by itself, but it's hard to deny that just about every scoop of ice-cream can be improved with a tasteful (and tasty) topping. But what if the topping was weaved into the ice-cream itself? We're not talking about crudely crushed and mashed in confections – think ingredients smoothly blended and imbued in each spiral of soft-serve. Ice Dream in South Bank has taken some cues from international dessert trends for its Grey Street pop-up, where all sorts of tasty combinations are whipped up in a flash.


Forget the Eiffel Tower, the Hollywood sign or Shibuya Crossing – back when we could travel overseas, Kareena Woods and her family would fill their holiday itinerary with visits to the best dessert destinations they could find. Kareena has sharpened her sweet tooth across sojourns to America, Japan and Europe, each trip serving to help her accumulate ideas for her own cafe or dessert outlet. Earlier this year, Kareena finally scored the opportunity to put her extensive research to good use and realise her vision with Ice Dream, a multi-hued dessert-oriented pop-up that made a sweet first impression when it opened on Grey Street in early January. Danceable music emanates from a colour-soaked interior, beckoning sugar seekers to step inside and marvel at the containers filled with mix-ins and mouth-watering ingredients.

Ice Dream isn’t your run-of-the-mill scoop-in-a-cone concept – here a host of fresh fruit, cereals, biscuits and imported confections are smoothly blended into a range of unique, tongue-tantalising flavours. It all starts with the imported ice-cream machine, which comes equipped with a funnel and a drill-like contraption that gently mixes combinations and softly dispenses the creamy concoction into a waffle cone or cup. Kareena has assembled a menu of recipes honed over months of testing. Fruit fiends can dip a spoon into soft-serve ice-cream imbued with fresh chunks of mango, strawberry, blueberry, dragonfruit and lychee, or, if you’re looking for a nostalgia hit, Ice Dream also boasts ice-cream mixed with cereal – think Froot Loops, Coco Pops, Crispix and Corn Flakes. Other flavours include salted chips and caramel, gingerbread, choc cardamom, matcha, cookies-and-cream, and mint slice, while slices of American cheesecake are the perfect option for those seeking an alluring alternative to ice-cream. As for drinks, Ice Dream also concocts milkshakes imbued with Hershey’s chocolate, caramel or strawberry, plus sparkly gold or rose-gold Stardust Lemonades. Ice-cream fanatics are encouraged to check in regularly, as Kareena is constantly adding seasonal and occasion-specific specials to the Ice Dream menu.
