Nothing like Nescafé – a Brisbane brewing legend launches Instant Specialty coffee

For anyone with functioning tastebuds, instant coffee is generally only turned to as a last resort – after all, it’s actually charitable to call the tinned stuff you buy in bulk at the supermarket ‘coffee’. It sucks, because the theory of being able to whip up a delicious brew in two minutes is pretty darn appealing – but how do you actually marry quality with convenience in the process? We’re in luck, because local Brisbane brewing legend Marcus Allison has cracked the code with his Instant Speciality coffee.


You read that right – like some Hannah Montana best-of-both-worlds fantasy, Instant Specialty coffee combines the speed of instant coffee with the high quality of a specialty brew. Marcus’ eight years of experience in the industry combined with his passion and skills have led to this latest venture – and he’s spent the past year getting the process just right. Rather than rush the project, Marcus has been tinkering and trialling to release a product to be proud of – and we finally get to taste the fruits of that labour.

So how the heck does Instant Specialty coffee work? After a long trial and testing period, Marcus was able to perfect the process of extracting and freeze-drying some of the best beans in the business. Through his years in the industry, Marcus has developed close working relationships with some of Australia’s (and the world’s) best boutique suppliers – so the beans that Instant Specialty is made of are from trusted and reputable sources. Due to a quality-over-quantity focus, the team uses a sophisticated extraction system and freeze-drying process to produce small batches of delicious instant sachets. The hard work is all done by the pros – all you have to do is brew it how you like it.

Want to get your hands on the goodness? As of this week, you can pick up Instant Specialty Coffee in individual sachets or in mixed tins of 10 at Bunker, John Mills Himself and Bessa.
