Comfort food gets the fine-dining treatment at Albion’s Lodger Kitchen & Bar

Two seasoned hospitality experts have struck out together to bring something a little bit different to Albion’s dining scene. Blaire Gillespie and Daniel Collins have combined their talents to give their favourite comfort foods a fancy sprucing, plating up creative and charming fare (and tasty drinks to boot) at newly opened Lodger Kitchen & Bar.


Blaire Gillespie has worked across her fair share of venues, gleaning knowledge as a front-of-house pro at the likes of Stokehouse Q and Bacchus. It was at Bacchus that Blaire became pals with chef Daniel Collins, and soon the duo decided to pool their resources and talents, branching out on their own on a concept that foregrounded their interests. Lodger Kitchen & Bar is the result of the pairing, a casual eatery tucked away on Sandgate Road in Albion. The venue affords the duo a blank canvas to grow into, offering a dog-friendly locale with a breezy exterior patio and more sophisticated interior dining space. With experience in the fine-dining world, Blaire and Daniel have toyed with the idea of classing up comfort food, keeping it approachable but intriguing.

Although there’s a fine-dining twist at play, Blaire and Daniel have been careful to keep Lodger’s menu appealing to all comers. Vegan and gluten-free requirements are amply catered for across a menu that aligns closely to modern Australian bistro fare, with some French and Italian influences sprinkled within. Comfort food provides the key inspirational touchstone for the menu, starting with snacks like crispy potato skins with slow-cooked pork belly, olives stuffed with haloumi, brie and blue cheese, and house made beef jerky. Daniel has flexed his creative skills with a host of scrumptious dishes for the main event, including gin-cured salmon with roasted fennel, mushroom pierogis, beetroot ravioli stuffed with goat’s cheese and the spiral ratatouille with confit vegetables and tomato ragout. Lodger Kitchen & Bar’s drinks selection starts with a range of tailor-made cocktails with an emphasis on the classics, as well as local craft beers from Slipstream Brewing Co., Newstead Brewing Co., All Inn Brewing Co. and Ballistic Beer Co., and a selection of Australian and left-of-centre French wines.
