Introducing Mac. By Brookie’s – a nutty new release from Cape Byron Distillery

Cape Byron Distillery, the geniuses behind Brookie's Gin, have a new member in the family that's rich (ohh), smooth (hello) and a little bit nutty (there's always one, right?). Let us introduce you to Mac., a versatile new drop straight from the depths of the Byron Bay hinterland that's sure to shake up your liquor cabinet.


Mac. By Brookie’s is a roasted-macadamia and wattleseed liqueur, marking yet another masterful creation from the Cape Byron Distillery team. It’s crafted by steeping roasted macadamia nuts (straight from the distillery’s own macadamia farm), along with macadamia-nut shells and toasted native-Australian wattleseed in a wheat-based neutral spirit, before pure spring water from Wollumbin (Mount Warning) is added along with a touch natural sugar-cane syrup. The result? Well, the distillers have affectionately dubbed this one the ‘Mac Daddy’ of liqueurs, with smooth flavours of butterscotch, cacao and coffee creating a long-lasting and moreish finish. It’s decadent and completely natural, with rich notes and golden hues only adding to its allure.

Mac. can be enjoyed straight over ice with a squeeze of fresh lime, or stirred down Old Fashioned-style with whisky and bitters over ice. Those that like to live on the edge can also use Mac. in an affogato, poured with coffee straight over ice-cream, or even in an espresso martini for a little extra jazz. Mac. joins Brookie’s Dry Gin and Brookie’s Slow Gin in the Cape Byron Distillery line-up – you definitely need to get acquainted with all three.
