Return of the mac – Mac From Way Back opens a mac ‘n’ cheesery in The Valley

We’re so excited – we just can’t hide it. One of the most popular food trucks is letting all the people know that it’s back to run the show. That’s right – Daddy Mac is making us jump (for joy). Mac From Way Back has set up shop inside Fortitude Valley haunt Sabotage Social, pumping out overflowing bowls of gooey and golden mac 'n' cheese with a variety of twists, as well as loaded burgers that make our hearts pound or stop beating entirely – frankly it could go either way.


When Dane Coote left the world of restaurant dining to start a food truck, he took a gamble on the humble mac ‘n’ cheese, not knowing that it would become such a runaway success. In 2016 Dane put wheels to pavement with his mobile mac ‘n’ cheese dispensary Mac From Way Back, earning a fervent following of fans that couldn’t get enough of Dane’s bowls and burgers, both brimming with cheesy goodness. Fast forward a year and Dane has decided to pump the brakes on the truck (for now) to focus on opening up Brisbane’s first dedicated mac ‘n’ cheesery. The team at popular watering hole Sabotage Social offered Dane the bar’s kitchen space to take over and now Fortitude Valley punters can swing through for a brew and a chew from Wednesday through to Sunday.

The popular food-truck menu forms the basis for the bricks-and-mortar location’s offering, with all of the favourites you know and love remaining. The gargantuan Mac Daddy Burger comes stuffed with a beef patty, bacon, crispy brisket, onion rings and mac (yes, seriously), while the Mac Chicken Burger pairs up crispy crumbed chicken with bacon, mac ‘n’ cheese and chipotle mayo. Dane’s range of covetable mac bowls is also available, with creamy mac ‘n’ cheese paired with the likes of bacon, fried onion rings and fried haloumi. New special bowls will be featured – such as the spicy chilli chorizo and decadent truffle mushroom bowls – as well as some experimental bites including mac ‘n’ cheese bomb roulette, which sees one in five cheesy macaroni balls infused with a fiery combo of wasabi and chilli oil.
