For many hungry festival goers and ravenous street-food seekers, the sight of Mac From Way Back's vibrant yellow food truck was enough to induce rapturous joy. The wagon built a huge following thanks primarily to its menu of creamy mac'n'cheese and juicy smash burgers, but now Mac From Way Back is shifting gears, or rather, coming to a stop. In the coming weeks Mac From Way Back will open a bricks-and-mortar eatery in the heart of Woolloongabba – creating a dedicated home for baked mac, cheesy burgs, loaded fries, mind-boggling desserts and ice-cold beers. We've got a look at the goods ahead of the official opening but be careful, because this feast is not for the faint of heart or full of stomach.


Since first emerging on the food-truck scene, Mac From Way Back has clocked up some serious miles. The brightly coloured vehicle has long been a fixture at southeast Queensland music and food festivals, food-truck gatherings and on prominent corners, with its singular menu of street eats making it stand out from the rest. Dane Coote, Mac From Way Back’s head honcho, has always envisioned transforming the concept from mobile vendor into a bricks-and-mortar eatery (experimenting with the idea via pop-ups in Fortitude Valley and Beenleigh), and early this year decided to retire the food truck for good and finally act on his desires. In the coming weeks Dane will open the doors to Mac From Way Back’s brand-new Woolloongabba HQ – a laid-back and casual bar and dining spot nestled in the heart of the Logan Road dining precinct. Located in the former home of Sorellina, the locale is just a stone’s throw from the likes of The Gabba itself as well as Canvas, Electric Avenue and Detour. Final touches are currently being applied to the 180-sqm space, which boasts ample seating inside and out as well as eye-catching art from visual artist BoHDi (featuring a cast of characters called Mac, Big Burg, Fried and Slice Money) adorning the walls. Dane is keen to shake up the space further as time goes on, with a larger bar and booth seating planned for the not-too-distant future. For now, it’s the food that takes centre stage and boy, the fare is attention-grabbing to say the least.

Dane and his crew have spent the past few weeks tinkering and tightening up the Mac From Way Back menu, which offers plenty of eye-popping favourites from the food-truck days and some new additions worth drooling over. The logical starting point for anyone visiting is the mac’n’cheese. The signature baked mac is worth jabbing a fork into on its own, but the smart cookies among you will likely spy the list of accompanying toppings, with the likes of smashed beef patties, Nashville-style chicken tenders, crumbed mushroom, bacon, hash browns, cheese curds and mac (yes, an extra scoop of mac) helping make your serve of gooey goodness one to remember. Rivalling the mac in the popularity stakes is Mac From Way Back’s range of smashed burgers. After gauging your hunger level – we recommend coming famished so you can go all out – opt for either a single or double-patty smashie (both boasting cheese, onions, pickles, Mac mayo and mustard on a house-made bun), classic cheeseburger (with bacon, tomato and lettuce in the mix), a Nashville hot fried-chicken burger with creamy apple slaw, or the vegetarian-friendly Iceburg burger, which features crumbed mushroom, grilled saganaki, beetroot relish, lettuce and a hearty dollop of basil Japanese mayo. A selection of specialties include the likes of chicken tenders, woodfired mac’n’cheese pizza (the dough is also made in house), grilled saganaki and giant mozzarella sticks, with the latter oozing cheesy goodness once bitten into. Seasoned fries will certainly help fill up any gaps, but those looking to push the limits can upgrade your chippies to one of three loaded varieties – feral fries (topped with mac, bacon, tomato sauce and chilli mayo), chicken fries (layered with fried chicken, slaw, pickles and special pink sauce), and bolognese loaded fries (a helping of fries topped with creamy mac, a coating of bolognese sauce and a dousing of liquid cheese). As difficult as it might be to do, we suggest saving room for dessert – giant pizza cake slices and cheesecake sticks are shaping up to be a perfectly indulgent finish. Soon Mac From Way Back will add booze to its menu, serving a selection of craft beers to help guests wash down their belt-loosening feasts.
