Notwasted is the handiwork of Elliot Scali, who took a break from the fast-paced lifestyle of data analytics for a major Australian telecommunications company. With a little more space to breathe, Elliot began exploring his passion for the process of natural winemaking and became dedicated to developing a transparent retail platform that supports the makers and growers in the burgeoning natural wine industry (although it may seem like a new ‘trend’, it actually signals a romantic revival of ancient wisdom). The result is Notwasted and it’s here to help you sort the wheat from the chaff to bring you a seriously good drop – whether your hankering is for a punchy pet-nat or a refreshing rosé. At its core, Notwasted exists to tell the stories of minimal-intervention winemakers both here and abroad so you know exactly what you are drinking – stories such as James Erskine’s journey from sommelier to farmer, which has all of the hallmarks of a wine revolution, or Gianmarco Antonuzzi’s time-honoured tradition of doing everything by hand.
According to Elliot, natural wine can be a bit of an ambiguous term as it’s not currently regulated, which leaves it open to misrepresentation (you can read more about the definition here), however Notwasted’s criteria is pretty simple – it’s wine that is farmed organically with nothing added or removed apart from the occasional marginal amount of sulphur at bottling. The drops featured on Notwasted showcase the unique tastes of a time and a place, and are not necessarily made to taste the same year to year or even bottle to bottle.
