Ol’ School’s origins are simple – a group of lads who love fish and chips and wanted to deliver both, plus all of the good-old trimmings, in the best way possible. Those lads are Maris Cook and Dan Ward, the brains behind Hello Please, who have partnered with design studio Standing By and head chef Jesse Stevens to create the fast-paced South Brisbane eatery. While you can get takeaway from Friday to Sunday, Ol’ School is a clear step above the fish and chip shops we’re used to. You won’t find stacks of defrosted fish on display in a front counter or gaudy blackboard menus, instead you’ll find cobalt-blue painted concrete floors, teal and timber booths, and a counter display of boutique wines.
Also unlike your classic corner store, Ol’ School is all table service. Once seated you’ll notice your table already comes equipped with a few fish-and-chips essentials – bottles of malt vinegar and house hot sauce, as well as cornichons, pickled onions and salt flakes. Forget wasted minutes deliberating over cod or snapper – your choice of fish is the best quality and freshest available at the market that day, you just have to decide if you want it battered or grilled and served with chips or salad. Drawing on chef Jesse’s training at now-closed three-hatted Pier in Rose Bay, the fish is carefully prepared and cooked using proper techniques. Ol’ School’s skin-on chips have been tried, tested and cooked using a three-step process to ensure that perfect crispy-on-the-outside soft-on-the-inside texture, and are served communally (for optimum sharing) by the scoop atop greaseproof paper in the middle of your table. Nostalgic sides of onion rings, dim sims and potato scallops also feature on the menu, as well as fish tacos and burgers, prawns on toast, and truffle chip or calamari butties (basically a fancy chip/calamari sandwich – think chips and truffle mayonnaise on a milk bun, and fried calamari, toum and bell pepper ketchup on ciabatta). Much like sibling venue Hello Please, you can also opt for the shared feast if you want a bit of everything, with fish, calamari, dim sims, chips, onion rings and condiments. Finish off your meal with a glass of wine or beer, or kick it up a notch with Ol’ School’s house-bottled classic cocktails served over block ice – select from an old fashioned, negroni, martini, cosmopolitan or margarita.
