Pavement Whispers: Volume 182 July 24

From whispers of Michelin-starred chefs to an espresso martini festival, The Weekend Edition is always on the search for the latest news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

The Calile Hotel Lobby Bar
Latest news from The Calile Hotel – the urban resort has announced its executive chef and the Lobby Bar. Kitak Lee has joined the hotel team after heading up the two-hatted The Table at Kuro Kisumé in Melbourne, drawing on his South Korean upbringing and classical European training to create an innovative menu and creative cocktail list. The Calile Hotel’s Lobby Bar will be a centrepiece for the hotel, serving up a contemporary menu from breakfast right through to evening dining. The aim is to create a classic hotel menu for the modern era, reflecting the Queensland lifestyle through local seasonal ingredients, alongside a curated Australian-dominant wine list, cocktails and house-made sodas. Joining Kitak (whose resume also boasts sous chef roles at Sydney’s Momofuku Seiōbo, Cho Cho San and Bilson’s) will be front-of-house manager Katrina Ford, returning home to Queensland after managing the likes of Sydney’s Coogee Pavilion and Guillaume, and London’s Shoreditch House. Chef Valentino Marcattilii at Bacchus
Diners are in for a treat this September, when South Bank’s Bacchus hosts two Michelin-star chef Valentino Marcattilii from Ristorante San Domenico in Italy. The renowned chef will be joining Bacchus head chef Massimo Speroni for five special degustation experiences featuring Valentino’s most beloved dishes from Tuesday September 18 to Friday September 21. Ristorante San Domenico opened in northern Italy’s Imola in 1970, earning its first Michelin star in 1975 and its second in 1977 – a standard that has been consistently maintained for 41 years. The restaurant is renowned for its simple home-style yet inventive dishes, including its famous Uovo-in-Raviolo – a singular ravioli with an egg inside. Massimo worked under Valentino at Ristorante San Domenico as sous chef before moving to Australia, and cooking alongside his mentor once again has been a long-time dream. Espresso Martini Festival
The caffeinated libations will be flowing come Tuesday August 14, when the Espresso Martini Festival returns for its second year. From 5:30–10:00 pm, Fish Lane’s Hello Please and sibling venue Ol’ School will be creating a menu of caffeinated concoctions, including a condensed-milk ice-cream cold-drip vanilla martini and a rum salted golden syrup espresso martini, alongside 4 Pines beer, Save Our Souls wine and a selection of non-alcoholic sips. The two eateries will also be serving up street eats to snack on throughout the evening, with bites such as spicy fish cake bao, potato scallops with Szechuan mayo and fish dim sims. Tickets are $45 per person and include an espresso martini on arrival, plus street eats throughout the evening. Last year’s Espresso Martini Festival sold out in 48 hours – find details on how to buy tickets in our Event Guide.

nodo Camp Hill
Southsiders rejoice – nodo is bringing its coveted gluten-free doughnuts to Camp Hill Marketplace. The Newstead favourite is opening its third venue this coming October, set to join the likes of Flour & BloomHatori Karaage and a soon-to-open permanent Jocelyn’s Provisions. Much like its Newstead sibling, nodo Camp Hill will offer a full brunch menu, as well as its dough-free doughnuts, baked goods, treats and Super Natural Shakes. The cafe will spill out onto a grassy outdoor space, where patrons will be encouraged to stretch out in the sun to enjoy their treats. We’ll have full details for you in the coming months!
