Pavement Whispers: Volume 188 September 4

From whispers of seafood trails to gingerbread pancakes, The Weekend Edition is always on the search for the latest news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Huskk
North Brisbane is soon to welcome a fresh new cafe to the leafy suburb of Grange, when Huskk opens its doors on Days Road in early October. Huskk comes from husband-and-wife duo Tracey and Alastair Macpherson, who are bringing together their combined hospitality experience to create a cafe that celebrates beautiful food that nourishes the soul. Alastair has been at the helm of QPAC’s kitchen for the last three years as executive chef, and was previously head chef at Michelin-starred The Kitchin in Edinburgh for four years. Over those four years, Tracey held the role of restaurant manager at Michelin-starred Restaurant Martin Wishart in Edinburgh. Drawing on this experience, the couple’s aim for Huskk is to offer meticulously crafted, handmade and locally sourced dishes paired with down-to-earth service. Huskk will be open for breakfast and lunch seven days, serving up dishes such as gingerbread pancakes with whey butterscotch sauce and Bunya nut crumble, and potato and leek hash with crisp Bangalow pancetta, poached egg and wilted bower spinach, alongside locally roasted Bear Bones coffee.

Sea to the City – Brisbane’s Bug & Oyster Trail
Seafood lovers, we highly suggest you clear your calendar for Sunday October 7. On this glorious spring day, the City Reach from Eagle Street Pier to Customs House will host the Sea to the City – Brisbane’s Bug & Oyster Trail, an afternoon of wining and dining celebrating the season’s most delicious fresh seafood. With the sparkling Brisbane River as its backdrop, the alfresco food trail will feature pop-up food stalls and bars along the river’s edge, showcasing bugs, oysters and other delights to the sound of live music. Fourteen restaurants along the Sea to the City trail, including Il CentroJellyfishBlackbirdCustoms House and Friday’s Riverside, will also be offering specially curated menus featuring fresh seafood dishes for the event. Gabba + Co
Woolloongabba locals were saddened to see Trafalgar Lane cafe The Priory close a few months back, but spirits are lifting once more with the news of a brand-new eatery in the works at its former Stanley Street home. Gabba + Co is the name of the forthcoming venue, masterminded by the trio of Lorenzo Nobilio (also of Yeronga’s Osteria Epoca), Simon Lambert and Tom Holohan. The three are looking to establish a multi-faceted haunt for locals, offering breakfast and lunch to dinner and late-night drinks and nibbles. Unlike Osteria Epoca’s Italian fare, Gabba + Co will plate up modern Australian classics with innovative variations. The space is currently undergoing a slight overhaul to facilitate a relaxed dining experience, with a new bar gearing up to offer cocktails, wine and Gabba + Co’s own specially brewed beer. Although menu details are being kept close to the chest, we won’t have to wait long to check it out – Gabba + Co is aiming for a mid-to-late September opening.

Camilla and Marc
Yet another Queensland flagship has been announced for James Street’s soon-to-open The Calile Hotel – luxury label Camilla and Marc has announced it will be joining the boutique precinct. The store will be Camilla and Marc’s tenth Australian boutique, featuring custom terrazzo floors and modern marble accents, framed by piano timber-finish walls and brass detailing. Camilla and Marc James Street will be home to the label’s complete ready-to-wear and C&M collections, including the launch of its eyewear range. The boutique will join the likes of Dion Lee, bassike, Venroy, Bec + Bridge and more at The Calile Hotel, due to open this season.

New Emporium Hotel chefs
Emporium Hotel has announced the appointment of its new executive chef and executive sous chef for its brand-new South Bank property. Chris Norman and Alex Liddle have signed on for the roles, following the departure of Josue Lopez last month. The husband-and-wife team have worked in key roles across luxury hotels and Michelin-starred restaurants, including Palazzo Versace on the Gold Coast, One & Only Hayman Island and London restaurants The Square in Mayfair and The Ritz London. The duo will commence wok in mid-September, overseeing the menu development and delivery of offerings across Belle Epoque, and forthcoming arrivals the Piano Bar, The Terrace and Emporium Hotel’s marquee restaurant.
