Until recently, Base Architecture’s Shawn Godwin had only experienced bars from one side – the customer’s side. That all changed when Base Architecture moved into its current site on the corner of Thomas Street and Days Road in Grange. Discovering a sizeable space underneath the building, Shawn received a lightning bolt of inspiration to turn the subterranean space into a coffee-hub-cum-bar Quincy’s Bar and Cafe – giving Grange locals a place to grab a drink on a weekend and a pick-me-up in the morning. Drawing inspiration from the aesthetic and approach of Archibald Quincy Jones, Shawn got to work designing his perfect bar, resulting in a fit-out that boasts a chic meshing of steel, brick and concrete that offers style without pretension, a sense of flow and warmth throughout.

Quincy’s Bar and Cafe is a venue that morphs throughout the day to cater to the needs of the local community. In the morning a coffee nook pours Mocopan Coffee and a selection of bagels and danishes for the grab-and-go crowd, before the bar opens in the afternoon on Friday, Saturday and Sunday for tipples and nibbles. An on-site kitchen (housed in a renovated bank vault) serves up bites such as Tiger Buck jerky, garlic dill crisps, olives, bar nuts and a charcuterie grazing platter piled with Barossa Criso bread, Duroc jamon, Cremeux triple-cream brie and kalamata olives, while Crust Pizza next door can deliver straight to your table. The bar has taken a craft focus when it comes to the drinks, opting to source some of the best local drops over international brands. The beer taps pour drops from Stone & Wood and Green Beacon, while the back bar features wine and champagne, gin from Humpybong Distilling Company and Hippocampus as well as Mr Black cold-press coffee liqueur.
