The formula for a great cafe is simple – good food, good coffee and good service is all it takes. Bringing together each element into a triangle of hospitality greatness is The Brunswick Project, a new eatery looking to have all three categories amply covered. Thanks to a menu of bangin’ breakfast bites, a brilliant Brunswick Street location and bright smiles on all of the staff, New Farm’s newest arrival is set to be your favourite spot to spend a summery morning.


Jimmy Williams is a bona fide veteran of Australia’s hospitality scene, having cut his teeth across just about every cafe position from kitchen to table in his career to date. The Melbourne transplant has just opened The Brunswick Project, a bright and welcoming new cafe in the leafy heart of New Farm, directly across from New Farm Cinemas. Seeking to offer a consummate combination of food, coffee and service to the suburb, Jimmy set about installing his vision within an elegant Queenslander cottage – overhauling the space with re-dyed floors and deck, slick copper fixtures and accessories, and a new coffee-meets-bar counter. As per Jimmy’s specifications, The Brunswick Project eschews the fancy trappings of cosmopolitan cafes, keeping the decor light and breezy while choosing to let the offering speak for itself.

The Brunswick Project is first and foremost a hub for breakfast lovers. All-day breakfast is on offer until the kitchen closes, which is great because Jimmy’s signature dishes are well worth a try at any time of day. Claudia’s Baked Eggs – served with parsley bread crumbs, spicy beans and lemon – has been Jimmy’s go-to dish for 12 years, while his take on smoked salmon with creme fraiche, baby chat potatoes and poached eggs is a certified winner. Other dishes such as boiled eggs with vegemite soldiers, twice-cooked brioche French toast and the brekkie bowl showcase something for every taste. A curated lunch menu becomes available after 11:00 am, as well as a range of sandwiches made to order. Popular small-batch coffee roaster Rosso Roasting Co has supplied its award-winning beans, singling The Brunswick Project out for its only Queensland-based cafe. V60, cold-drip and espresso varieties are on offer for coffee lovers, as well as freshly squeezed juices, chai and tea. Fans of boozy brunches will get a kick out of The Brunswick Project’s drink selection, which includes sparkling wines, chardonnay, rosetta and more, plus Stone & Wood off tap, and a forthcoming selection of cocktails to help you start your weekend off right.
