It takes a lot of courage to enter the food business. For Peter and Ross Jacobi, their love of food was so strong it convinced them to jump from cushy jobs in the banking sector head-first into the Brisbane market scene, looking to make a name for themselves with their upstart chicken concept Wing Fix. The shift from desk to grill paid dividends immediately – the brothers were soon cooking up more than 500 kilos of chicken every weekend at their upstart market stall and following food truck. The Jacobis pinpoint their knack for elevating simple flavours as the key reason behind their success, and now demand has necessitated another evolution. Wing Fix has just opened its first bricks-and-mortar eatery in Morningside, taking over the space formerly inhabited by barbecue outfit Carolina Kitchen to dispense its range of mouth-watering morsels.
For their first physical location, Peter and Ross are removing limitations, giving themselves room to experiment with the menu well into the future. The Morningside menu is divided into two distinct sections – burgers and wings n’ things. The burger-centric half features flame-grilled Angus beef burgers (as well as an extra-meaty ‘pounder’ selection), and southern-fried and spicy fried chicken options cooked on a newly installed top-of-the-line grill. Wings n’ things is the side you need to look at for Wing Fix’s cluckin’ good bites such as southern-fried or grilled tenders, chilli cheese fries and serves of wings. The saucy flavour selection includes classics such as mild buffalo, honey soy and garlic parmesan, but fans of a simple crispy number can opt for original fried.
