The lengthy, chewy hand-pulled noodles expertly stretched and served at Biang Biang Fresh Noodle boast a cult-like following. It’s namesake specialty, biang biang noodles (named as an onomatopoeic reference to the slapping of noodle dough) is a regional dish from China’s Shaanxi province – a comforting staple comprised of thick, belt-width noodles typically bathed in a bone-warming broth. After building its fanbase at its first location in Toowong, Biang Biang Fresh Noodle relocated to Fortitude Valley in mid-2022, opening a charming little dispensary at the Central Brunswick shops. Here, the menu offers a broad selection of dishes with steaming serves of biang biang noodles as its foundation – think strands that are noticeably thicker than average, with the denser consistency helping carry the complex flavours of the broth from bowl to bonce. The menu starts with the signature Bang Bang noodles (served with pork mince, potato, eggs, tomato, carrots, shallots and salad), before moving in a spicer direction with the tom yum beef noodles (beef soup with tam yam sauce, salad, onion, sesame oil and liberal lashings of chilli and pepper oil) and the Sichuan dan dan noodle, which boasts pork mince, vegetables, soy sauce, vinegar, chilli oil and pepper oil. Other interesting options include yellow curry beef noodles, old Beijing-style noodles an special cumin lamb noodles, as well as sides like vegetable spring rolls, pork wontons with spicy chilli, and rougamo – a meat-filled sandwich, hailed as one of the oldest hamburgers in the world.
