When it comes to crafting authentic Japanese cuisine, Satoshi Kubota and Hajime ‘Jimmy” Sato are as accomplished as they come. Both chefs have worked extensively across Japan and Australia throughout their careers, honing their skills across internationally renowned restaurants. The duo teamed up in 2018 when they noticed that Brisbane was lacking a strong representation of authentic Japanese dishes, taking over a space in New Farm for their joint restaurant Chaya. Across lunch and dinner, this izakaya-style restaurant plates up a stellar array of delicious dishes that one might not typically see around town. The daytime menu features the likes of omurice, prawn katsu curry, sushi bowls, sizzling Hamburg steak, sashimi and sukiyahi. Once the sun sets, the menu expands to offer dote yaki pork skewers, wagyu tataki, charcoal-grilled yakitori, shabu-shabu wagyu beef, and Satoshi’s brilliantly assembled sushi and sashimi range, all of which can be paired with sake, sochu and Japanese craft beers. Satoshi and Jimmy source only the freshest ingredients for Chaya’s menu, enlisting the likes of Mountain View Poultry and Tender Valley pork for its protein supply. Chaya also serves a range of inventive desserts, with specials such as soy sauce ice-cream and green tea crème brulee appearing regularly. Finally, Chaya hosts monthly events that spotlight Japanese products and dishes, perfect for lovers of real Japanese cuisine.
