Wilston is a thriving hub for those that seek a satisfying breakfast for crave a cup of coffee, and the area’s newest locale Freja’s Cafe is a great spot to get both. Owned and operated by former semi-professional tennis player Freja and her partner Nathan – an accomplished fine-dining chef – Freja’s is a charismatic eatery and coffee nook made from an eye-catching palette of materials. After hanging up the racquet, Freja dove head-first into a pastry course, and upon relocating to Australia met Nathan and the two connected over shared passion for food. Nathan, who has worked in top-notch eateries such as Bar Alto and Stokehouse Q, was intrigued about the prospect of bringing his fine-dining know-how to a cafe setting, while Freja was keen to try her hand and coffee and pastries on a larger scale. Drawing inspiration from a research trip to Melbourne, Freja and Nathan settled on an approach that eschewed boundaries and limitations, paired with a desire to make everything in-house, from scratch and from locally sourced ingredients. The menu is littered with remarkable dishes such as the savoury croissant topped with pulled beef cheek, macaroni, fried eggs and green tomato, as well as pear waffles with vanilla bean ice-cream, strawberry mousse, elderflower and vanilla fairy floss. Freshly baked pastries (made from dough imported from France) are available as a grab-and-go snack, in addition to coffee from local roaster Seven Miles (with a selection of single origins to boot), organic tea from Mayde, freshly squeeze juices, Heirloom hot chocolate, beetroot lattes and more.
