Woolly Mammoth Alehouse underwent some big changes in 2019, undergoing a redesign and rebrand that delivered a pastel Palm Springs-inspired aesthetic, bulk cocktails and a menu of seasonal Mexican-inspired fare. The venue, now known as Ivory Tusk, is described as the sister of Woolly Mammoth – a lively and vibrant bar and casual diner that takes cues from mid-century Californian design and the vibrancy of Mexico. Luis Nheu of BSPN Architects has overseen the design of the space, including its three bar areas and some updates to the Woolly Mammoth Mane Stage, band room and garden terrace. Executive chef Graeme McKinnon (formerly of Covent Garden) has worked with head chef Jack Thompson (The Line & Label) to craft a menu of share-style eats, paying attention to locality, seasonality and freshness. The menu includes such Mexican-inspired eats as Baja fish tacos, pork chicharrones, lamb barbacoa, eye-fillet steak skewers, chorizo sliders, Mexican street corn and gazpacho shooters. The bar is pouring a variety of colourful drinks to match the decor, including eight tap cocktails, craft beers and more. Entertainment will also be key to Ivory Tusk’s offering moving forward, with live bands and DJs popping in for shows, while wannabe rock stars can live out their dream with Ivory Tusk’s own ‘Rockaoke’ nights.
