Update: Ramona Trattoria will officially open to the public on Sunday August 14.
Ashley Kent, a bright young chef whose resume boasts stints at Quay, Biota, Paper Daisy and Tartine in San Francisco, is bringing her formidable talents to Brisbane. In March Ashley will open Ramona Trattoria, a 48-seat restaurant in Coorparoo specialising in hand-shaped pasta and hand-stretched pizza and pizzette. The eatery will offer a polished form of casual dining, encouraging locals to visit several times a week without overspending. The restaurant will also boast a beverage list featuring a mix of natural and conventional wines as well as a cocktail list assembled by a well-known figure whose identity is being kept under wraps. Ashley is also keeping mum on the space itself, only revealing that Ramona Trattoria will boast a worn-in aesthetic and an open kitchen. Stay tuned for more!
