The August 2020 shuttering of culinary institution Stokehouse Q was a severe blow to Brisbane’s fine-dining scene, but a silver lining emerged quickly in the closure’s aftermath. Three former Stokehouse employees have struck out on their own, pooling their expertise (and redundancy cheques) to open Siffredi’s – a cheap, cheerful and cheeky spaghetti bar at the base of the London Woolstore on Vernon Terrace in Teneriffe. Long-time friends and coworkers Ollie Hansford (Stokehouse Q’s executive chef), Aleks Balodis (sommelier) and Stephen Overty (drinks slinger) had previously discussed teaming up for a venue long before COVID-19 hit our shores, but with unusual circumstances came an opportunity to bring the timeline forward. Although Siffredi’s (named after adult film star Rocco Siffredi – don’t look him up at work) is conceptually framed as a spaghetti bar, the trio are taking an irreverent approach to the venue’s culinary offering by imbuing the menu with quirks that aren’t traditionally Italian. Siffredi’s menu includes four kinds of snacks, five kinds of spaghetti-based mains and boozy soft serve for dessert. The spaghetti menu features one traditional pasta-dough variety and a selection of experimental choices made from seasonal ingredients (think carrot juice, mushroom, squid ink and more, with the menu changing weekly). A tight selection of wines will also rotate regularly, with new and old-world drops providing something for everyone. The space itself boasts a vibrant and clean colour palette of emerald green, pink and white, with a cosy interior space housing 16 high top seats spreading out onto the outdoor terrace, which can hold a further 40 patrons.
