Hellenika founder Simon Gloftis, alongside business partners Theo Kampolis and Kelvin Andrews, is announcing the first tantalising details of his third James Street concept Sunshine, which is set to open in the site previously occupied by Chow House later this year. The venture, which Simon has described as a passion project five years in the making, will draw influence from the nourishing food Simon grew up with – we’re talking Mediterranean delights with an all-vegetarian focus. Most notably, Sunshine will offer counter service from 10:00 am to 10:00 pm, with trays of stuffed tomatoes, beans and salads on display for express point-and-plate efficiency across both dine-in and takeaway orders. Thirsty patrons will also be free to sip juices, fresh lemonade iced tea, cocktails and organic biodynamic wines from Sunshine’s beverage list. A refurbishment process will see the interior of the space converted to house the kitchen, counter and condiment table (laden with chilli, olive oil and assorted vinegars), while Sunshine’s 80-patron dining space will be entirely outdoor. Expect a breezy buzzing boulevard atmosphere that draws aesthetic inspiration from modern Mykonos – think muted tones and coastal day club vibes that will suit sun-soaked snacking and eats in the evening.
