The Gibson on Stafford Road officially opened to the public in 2024, cutting the ribbon on a calming, relaxed and family-friendly venue boasting a restaurant, a cafe, a cocktail bar, a sports bar and two big outdoor green spaces. Equipped with a number of big-screen TVs, The Gibson’s sports bar is a place to gather mates and watch all of the big-time fixtures, while The Gibson Bar is where guests can grab expertly crafted cocktails and a curated selection of beers and wines. The restaurant draws upon Southeast Queensland’s abundance of top-notch produce to fashion a menu of gastropub-style fare – think crispy skinned pork belly with pumpkin puree, slow-braised lamb shanks, steak sandwiches, white miso grilled prawns, pizzas and truffle beef burgers. The Gibson’s cafe is a handy spot to nab a pick-me-up, with barista-brewed coffee, milkshakes, thickshakes, pastries and sweets available until the evening. Of the two large outdoor spaces, one is perfect for children to play on, while the other is dedicated to barefoot bowls. Seating out the back of the venue looks directly onto Gibson Park
