After a few years tantalising the tastebuds of Brisbane locals with his acclaimed East Brisbane eatery The Wolfe, Paul McGivern (formerly of Camp Hill’s Restaurant Rapide and Restaurant Manx at Portside) passed the restaurant’s reigns to ex-GOMA Restaurant chef Josue Lopez as of early 2019. This venture marks Josue’s first foray into chef/owner territory, together with his wife Krystal. Josue says he learnt a lot about himself during his time at GOMA, establishing his philosophy of storytelling through food, which is being carried through to his menu at The Wolfe. Regulars should be assured that the a la carte offering will not be too dissimilar to what Paul established at The Wolfe, but will showcase Josue’s distinct creative style. Some of the chef’s signature dishes, such as his painted wattleseed custard dessert with caramelised chocolate, macadamias and rosella, will be reinterpreted on the menu, plus a six-course degustation will allow Josue to take diners on a truly special culinary journey. The restaurant also still allows for BYO wine on Tuesdays and Wednesdays for dinner.
