Situated behind The Albion Butchery, Vaquero is a Spanish-influenced restaurant and bar that blends an intimate atmosphere with tapas-style dining. With a chic inside dining area, bar seating and a breezy outdoor courtyard, Vaquero can cater for groups and pairs. The menu offers a range of dishes from charcoal-roasted numbers such as coal-fried sheep’s brains and charred broccoli and asparagus to free-range pork terrine, shimeiji mushroom clusters with porcini brioche, smoked duck breast and Organic Bendele farm duck liver parfait. Vaquero’s bar focuses on cocktails, with large decanters offering batch-made classics, in addition to fresh jar cocktails ensuring consistency across every visit. Australian craft beer cans and upwards of 80 wines from Spain and Australia are also available.
