For this instalment of The Edibles we documented the pourover method at Bunker in Milton.

The washed filter bean we used was sourced from Thithi AA wet mill within the Thika Giiki Farmers Co-operative Society in Central Kenya and roasted by Kenmore’s The Single Guys. The co-op is part of the Coffee Transparency initiative, which adopts business practices that treat workers and suppliers ethically and fairly. Most of the farmers surrounding the wet mill are small producers, with the co-op bringing focus to protecting the environment and promoting economic transparency. Relish this close up step-by-step look at the pourover process of coffee creation.
