For this instalment of The Edibles, we documented the mango and sashimi scallop salad with chilli and pork crackling at Kwan Brothers. 

Inspired by the night markets of Singapore, the streets of Hong Kong and the izakayas of Tokyo, Kwan Brothers serves up a great selection of tasty Asian street food. Led by chef Tom Sargent, originally of Alfredo’s, who spent time in the kitchen of Marcus Wareing’s elegant British brasserie and bar The Gilbert Scott, Tom has crafted a fine Asian menu. The mango and sashimi scallop salad with chilli and pork crackling is topped with a generous serving of tiny green rice puffs. The puffs start their life as small flakes that are deep fried and then sprinkled over the dish with sesame and seaweed along with Japanese seven spice. Hervey Bay scallops are the hero of this complex and ridiculously tasty dish.
