For this instalment of The Edibles we documented the blueberry panna cotta at The Burrow in West End.
West End dining den The Burrow launched a new dessert menu this week, featuring a new set of three intricately detailed saccharine dishes to tempt you post-dinner. Coined the blueberry tattoo, the brown sugar and vanilla bean panna cotta with balsamic candied blueberries utilises a veritable garden of ingredients to create its vibrant flavour medley. A sticky balsamic glaze is carefully smeared across the plate, topped with the soft panna cotta speckled with vanilla bean seeds. Candied orange and lime add a crunchy, sugary texture to the otherwise smooth mound, while the candied blueberries too inject a sugar-tinted fullness. Despite appearing too pretty to possibly devour, the edible flowers and microherbs deliver a garden freshness to the overall plate – once you’ve overcome the idea of crushing the delicate petals with your tongue.
