Pavement Whispers: Volume 453 April 9

From news of a new sandwich spot for Sandgate to Woolloongabba's new Italian pasticceria, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Frankie’s on 4th
Brisbane’s sandwich obsession is spreading ever further outward, with a brand-new sambo concept set to officially open in Sandgate in mid-April. Frankie’s on 4th is the name of the cosy pit stop, which will be replacing Salad Days – a long-running carvery and salad spot – on Fourth Avenue. Operated by the crew behind beloved bar Mr Henderson (which is located just next door), Frankie’s is not only giving the team the opportunity to fill the gap left by Salad Days, but also improve Mr Henderson’s own offering. Last month the bar launched a taqueria-style menu out of the Frankie’s kitchen, serving the likes of pork and charred-pineapple tacos, prawn tostadas and churros. Now, the kitchen will also be put to use crafting a small and simple menu of sandwiches done well. If you were lucky enough to catch the sandwich bar doing a trial run last week, you’d have been able to sink your teeth into the likes of the chicken schnitzel sandwich (panko-crumbed chicken breast, iceberg lettuce and herb mayo on fresh white bread), the brisket cheesesteak (slow-cooked beef brisket birria with queso and sauteed capsicum on a hoagie-style roll), the Cubano (thinly sliced mojo pork with Swiss cheese, mustard and pickles) and the classic deli-style sandwich (packed with ham, salami, fresh tomato, Italian-style aioli and gem lettuce with balsamic). Once open, the team estimates that the Frankie’s on 4th menu could expand to include up to eight sandwiches, including vegetarian- and vegan-friendly options, with salads and fresh juices also potentially on the cards further down the line. Keep your eyes on The Weekend Edition for a closer look at Frankie’s on 4th very soon.

Cerin Pasticceria
Brisbane’s bakery scene will soon score an extra dose of Italian flair when Cerin Pasticceria opens in Woolloongabba later this month. The brainchild of pastry chef Matteo Cerin and front-of-house pro Giuseppe Caputo, Cerin will showcase a suite of Italian-style pastries, cakes, pizza by the tray and focaccia sandwiches. The duo is currently in the midst of a fit-out process, converting the old home of The Baker’s Arms into a classic bakery that meshes with the heritage aspects of its Logan Road surroundings. Once complete, Cerin Pasticceria will serve small treats (pasticcini), individual cakes, large cakes and limited-edition celebratory cakes. The counter will be filled with biscuits and pastries (both sweet cornetti and savoury items), as well as pizzas and focaccias by the tray. A small deli section will house a range of Italian products sourced from friends or reputable suppliers, while Veneziano Coffee Roasters will be supplying the all-important caffeine. Press’d Wine Co.
Gin, wine, charcuterie and toasties – talk about a sensational team up. Very soon, a new bar in Milton will be slinging all of the above in a slick, Hamptons-meets-Mediterranean setting. Press’d Wine Co. will soon open in the space previously home to Mongrel on Park Road, with the team gearing up to give locals a sun-dappled spot to sip effervescent gin-laced cocktails, a worldly array of wines and a clutch of tinned beers. The venue will be equipped with a fully stocked cheese and meat fridge, which (alongside a range of gourmet provisions sourced from Fino Foods) will be used to design a range of charcuterie boards, though guests will also be able to customise their own. The Press’d kitchen will also draw upon this larder to create a rotating menu of gourmet toasties, with options including a smoked wagyu brisket Reuben, Thai-inspired tuna melts, truffle-mushroom sandwiches and a lobster bisque toastie. Each sandwich will come with its own dipping sauce, for an extra flavour punch. Press’d Wine Co. is set to open imminently – read more here.

Frog’s Hollow Saloon
The hangovers have barely settled after Frog’s Hollow Saloons second birthday celebrations (which included five weeks of parties), but the whisky-spilling team is already getting back in the saddle with some updates. Frog’s Hollow Saloon has new extended trading hours, with the Charlotte Street boozer now operating from midday to 1:00 am, seven days a week. The cocktail list is as stacked as always, but the Frog’s family has made some tweaks to its bar menu, with a rotating selection of toasted sandwiches made in house available alongside snacks like pate, anchovies, cheese, guacamole and corn chips.

Will & Flow
In sad news for fans of sun-soaked sips and unbeatable river views, the team behind slick overwater bar Will & Flow has announced that the tipple and nosh spot will close this weekend. In a short statement posted to both Will & Flow and Treasury Brisbane’s social media pages, it was revealed that the riverside bar and restaurant, which is located on the banks of the Brisbane River between the QUT Gardens Point ferry terminal and the city side of the Goodwill Bridge, would shutter after its last day of service on Sunday April 14. The statement confirmed that private events already booked will go ahead as planned. Will & Flow, which has been operating since late-2020, has been a popular spot for inner-city denizens to catch the sunset with a cocktail in hand.
