The word authentic is often over or incorrectly used when it comes to describing cuisine. We make an exception, however, for the likes of Compadre Taqueria. The brainchild of Mexico City native Sebastian Gonzalez and his partner Ana Sofia Mujica, Compadre Taqueria will showcase time-honoured recipes perfected over generations. Both Sebastian and Ana Sofia come from a long line of hospitality veterans in Mexico – Ana Sofia’s family, for example, has owned restaurants in Mexico for decades, as well as making its own special mezcal. Tacos and tostadas will dominate Compadre’s opening menu, with cochinita pibil tacos being the star. This smoky, spiced regional delicacy sees pork or chicken marinated in citrus, garlic and achiote paste, slow roasted to perfection and topped with a vibrant and zesty scatter of pickled red onions, habaneros and fresh herbs. We’re also told to expect guacamole unlike any guacamole you’ve ever tried before in Brisbane, with Seb and Ana Sofia injecting what they describe as “proper Mexico City flavours” into the recipe. Compadre Taqueria will serve a variety of agua fresca and horchata, alongside a selection of mezcal. The team is currently scoping out spaces around West End and South Brisbane, with hopes to open before the end of the year – we’ll have updates soon.
