Pavement Whispers: Volume 422 August 22

From news of a new subtropical rooftop party spot to a retro drive-in burger joint coming to Southeast Queensland, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

The Aviary Terrace Bar
We probably don’t need to remind you that spring is approaching – the sensational weather is doing that for us. As we begin to defrost, the team behind upscale Queen Street steakhouse BŌS (led by restaurateur Chris Higgins, celebrity chef Adrian Richardson and entrepreneur Liam McMahon) is getting ready to cut the ribbon on its sassy little sister, The Aviary Terrace Bar, on Thursday August 24. Boasting a bird’s-eye view of the Brisbane River and Story Bridge, The Aviary is an 800-sqm open-air subtropical sipping spot that will pair these stellar viastas with a menu of light bites, curated cocktails and fine wines and champagne. With an aesthetic described as sleek, modern and elegant, The Aviary will be kitted out with booth seating (complete with bottle service) and an arresting salmon and deep-green colour scheme. A roster of DJs will ensure the vibes are always on point, making The Aviary the ideal pre- or post-dinner locale or a primo Friday night party spot. Keep your eyes peeled for an up-close look at The Aviary Terrace Bar soon.

Slim’s Quality Burger
In case you missed the news last week, Slim’s Quality Burger – a 1950s Americana-inspired diner concept – is set to make a foray into the Southeast Queensland burger scene next month, with two location openings on the cards for September and October. Slim’s Quality Burger will open in Kippa-Ring in September, followed by another location in Slacks Creek soon after, with both sites the first in the portfolio to offer drive-thru and drive-in dining. Those cruising in for a feed will be able to order their meal directly to their car using a QR code ordering system, while dine-in guests can sink into some cherry-red banquettes and soak up Slim’s nostalgia-inducing retro aesthetic. The Slim’s menu is headlined by a range of Angus beef burgers, fried-chicken sandwiches and veggie burgers, while extras like hand-cut fries, ice-cream churned on site and an assortment of thickshakes. The new locations will also offer a range breakfast items (think bacon and sausage breakfast burgers, freshly squeezed OJ and healthy chia puddings), which are exclusive to Queensland. Stay tuned for more on Slim’s Quality Burger’s arrival soon!

Dim Sum Degustation at Southside
Calling all siu mai maniacs and hardcore har gow lovers – the team at Fish Lane East-Asian eatery Southside is bringing back its much-loved dim sum degustation on Thursday August 24. The event will see the Southside kitchen team, helmed by head chef Benny Lam, turn out a five-course, twelve-dish (plus dessert) affair, featuring some favourites from past editions and a host of tantalising new bites. This year, sit down to a feast featuring the likes of Tasmanian ocean trout with aged ‘Jiang You‘ golden sesame, smoked tea egg with seared foie gras, cumin-spiced lamb dumplings with ‘balsamic’ Kurozu black vinegar, lobster and prawn spring rolls with sea urchin and shiso, Peking-style pulled-pork puff with charred pineapple, and master stock wagyu brisket with cheung fun rice noodles. Tickets to this delightful dinner are available now for $99 per person, with an additional champagne pairing available for a further $99. Head to the Southside website for a peek at the full menu and for booking details.
