Pavement Whispers: Sushi Room is expanding its presence in The Calile with a new bar extension

Two years after Sushi Room made its grand debut inside The Calile Hotel, the high-end Japanese restaurant is undergoing some renovations. Sushi Room is set to expand into a neighbouring tenancy, installing a new bar area and entrance on Doggett Street.


Even after two years operating at The Calile Hotel, a table at Sushi Room is still one of Brisbane’s hottest bookings. The premium Japanese-inspired restaurant – owned and operated by Simon Gloftis of Hellenika and SK Steak & Oyster fame – might be a little bit easier to get into come spring, as the Sushi Room team has announced plans to expand its footprint within the renowned James Street hotel.

The restaurant will be absorbing its neighbouring tenancy, with works commencing this month to amalgamate both sites into one. Internal walls will be removed and the restaurant’s formal entrance will be relocated to Doggett Street, after which the bar will be repositioned closer to the entry and the existing bar utilised to bolster the size and capacity of Sushi Room’s existing dining area.

Sushi Room’s original architects Richards and Spence will be designing the new aspects, extending the original aesthetic (a minimalist and abstract interpretation of Japanese mid-century pop culture and the neo-futurist style of the sixties) and maintaining the material palette through the use of natural stone, timbers, papers, and lighting.

“It is the perfect time for us to expand and this is how I imagined Sushi Room to be from the outset – however we had to wait for the space to became available,” says Simon Gloftis. “The expansion will also allow for a wider variety of dining options. Once open, our full menu will now be available at the bar, allowing more flexibility for our guests and choice as to where they prefer to sit.”

Works are not expected to hamper Sushi Room’s operations, with the restaurant remaining open throughout the renovation. Stay tuned for a peek at the completed expansion soon.
