Pavement Whispers: Volume 424 September 5

From news of a brand-new craft-beer brewery in West End to an inner-city coffee bar showcasing exceptional roasters, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

The Brew Baron Beer Company
There’s a new crew at the helm (and a new name on the sign) of one of West End’s most popular breweries. Parched on Montague Road has officially been transformed into The Brew Baron Beer Company – a beer maker with a quirky and tongue-in-cheek personality. Owned and operated by Brad Sayer, Rita Ferraro and Gibran Ferraro Firmo, The Brew Baron Beer Company is retaining much of the community-centric feel of its predecessor, but with some timely tweaks giving the beer selection and kitchen offering a boost. The fare has been infused with some international flavours, with pub-style grub like ten-hour braised beef cheek Birramisu Pie and chicken parmies available alongside tempura prawns with wasabi aioli, pulled-pork tacos, karaage burgers with kimchi slaw. Long-standing head brewer Matt Wolfe has stayed on to continue crafting Parched’s award-winning beers, now with greater autonomy to experiment and flesh out the range. In addition to the enhanced food and drink offering, The Brew Baron crew will be giving its spacious digs a refresh over the coming months, adding in a pool room on the mezzanine level, big-screen TVs playing live sport, new leather chesterfield sofas and a newly constructed deck. Live music will also be making its return to the brewery, ensuring it’ll remain a popular West End haunt under its new ownership.

Guest Coffee Bar at Inter/Section
When Coffee Anthology opened at Inter/Section – the 700-sqm laneway precinct bridging Mary and Charlotte Streets – it was merely step one of a multifaceted rollout of several coffee and food concepts. Following on from the launch of Inter/Section’s own cafe kitchen Fika and The Whisk Fine Patisserie’s croissant-slinging kiosk, the team will activate the coffee bar space at the laneway’s Mary Street end. Where Coffee Anthology is known for shining a light on a myriad of coffee makers through its multi-roaster offering, Inter/Section’s Guest Coffee Bar will give exceptional roasters from Australia and abroad the chance to showcase their coffee range in detail on a fortnightly or monthly basis. The caffeine-dispensing pop-up will officially launch on Wednesday September 6, with local outfit Cavalier Coffee Roasters taking over the bar to serve espresso-based and filter coffees for the rest of the month. Guests will be able to try Cavalier’s Sidewinder, Flywheel and Maverick blends – as well as fresh pastries from The Whisk – between 7:30–11:30 am from Monday to Friday.

Establishment 203
A once-iconic Fortitude Valley nightspot will soon be home to an Italian-style steak restaurant boasting some lofty aspirations. Establishment 203 will open in November at 621 Ann Street, a site that might be familiar to some as the former home of Monastery and Oh Hello. The restaurant is the brainchild of a generational cattle-farming family boasting Italian heritage, with a paddock-to-plate ethos looking to shine a spotlight on Queensland’s best beef and seafood. Ben O’Donoghue, a renowned culinary figure famous in Brisbane for founding cafe institution Billykart Kitchen, will be helming Establishment 203’s kitchen, which is being equipped with a Michelin-quality MKN induction cooking suite and a Mibrasa parrilla and charcoal oven. Ben will be using this top-of-the-line gear to cook sensational steaks (expect eight to ten cuts, including four on-the-bone options) and a range of pasta dishes (filled pastas – from cappelletti to agnolotti and ravioli – hard pastas and some fresh extruded pastas). The steak and pasta assortment will be supplemented with well-sourced seafood, poultry and game from across Queensland and Australia. The restaurant’s beverage menu will include a solid Italian-leaning wine list (featuring some rare reds), Brisbane craft beers and a collection of trademark cocktails. Bookings for Establishment 203 will launch in October – click here to read all about the restaurant before it opens.
